Miniature Whole Wheat Vegan Beer Donuts

How does that name not draw you in?? Don’t lie, you’re interested.

I have been thoroughly enjoying the warmer weather and now that Steve and I have our first home, we’ve been all over the garage sales here. Although we’ve found a number of practical and awesome things for the house…a couple weeks ago I had my best purchase yet. I found a miniature donut maker at a garage sale for three dollars and it was a fantastic investment! Donuts are an absolute favorite of mine and if eating them all day every day was healthy I would do it.

See? Just a friendly reminder of the amazing donut display at our wedding cause we love donuts that much!

As you can see above, donuts were apart of our wedding day instead of cake. We wanted the day to feel like things we would typically do, one of which includes enjoying donuts. We don’t get them often but when we travel we always make a point to find a local donut shop. If you followed along during our recent Belgium trip, you’d see even across seas we found a donut cafe! Below are a couple of my other favorite donut memories I thought I would share with you.

This brings us to the actual point of the post! When Manitoba Milling Company sent their ambassadors a recipe contest using their whole milled ground flax seeds AND I happened across the miniature donut maker (Baby Cakes brand)…it was pretty clear what I had to do. Oh, what’s whole milled ground flax seeds? Check out this post which shares my top reasons for adding flax seeds to your eating style.

If you didn’t know, whole milled ground flax seeds can be an egg substitute for baking. Not a substitute for scrambled eggs though 😛 hah! In baking though, it works pretty well and for one egg you take one tablespoon and mix with three tablespoons water. Let it sit for fifteen minutes in the fridge to thicken.

I’m not a vegan but when I was thinking about flax seeds and using them in a new recipe, I thought baking with a vegan egg would be a great place to start. Plus, it got me using some beer in the fridge which is excellent for baking because of the flavors and carbonation. Thus, the amazing whole wheat vegan beer donuts with a fresh blackberry glaze were born. Yes, it’s a mouthful of a title but they’re worth it.

I have a traditional donut pan for baking so if you don’t have a mini donut maker like mine, you could bake them in a traditional pan at 350 for 8-10 minutes. Otherwise, these little pups took four minutes each round and came out perfectly.

Whole Wheat Vegan Beer Donuts

C'mon, you know you want them!

Ingredients

  • 1 cup whole wheat flour
  • 2 tsp baking soda
  • 1 tbsp whole milled ground flax seed / vegan egg If not using, use one whole egg. For a vegan egg, mix 1 tablespoon flax with 3 tablespoons water, mix and let sit for 15 minutes.
  • 1/2 cup + 2 tbsp beer choose any – I used 312 Wheat Ale from Goose Island
  • 2 tbsp brown sugar or maple syrup
  • 1/2 tsp vanilla extract
  • 4 tbsp canola oil

Fresh Blackberry Glaze

  • 1/4 cup mashed fresh blackberries
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp almond milk (or regular milk) ONLY IF NEEDED! Add at the end of it is too thick and add one tablespoon at a time

Instructions

  1. Mix all dry ingredients

  2. Put all wet ingredients in a small bowl and gently stir. Do not mix and lose carbonation from the beer

  3. Add wet to dry and gently mix with a rubber spatula

  4. Place mixture into a ziplock baggy (trust me) and cut the corner to use it like a pipe bag

  5. Using a mini donut maker – fill the slots for the donuts and close the lid to cook for four minutes. If using a donut pan, bake for 8-10 minutes at 350 degrees or until lightly browned on top.

  6. Once cooled, drip your glaze across and lick the spoon. Enjoy!
